Baked Chickon-ion Nuggets

Chicken Nuggets are such a multi-purpose snack. You make a batch and God-forbid if there are any left overs you could throw them in a salad, make a Manchurian curry, pack them in a lunch box..thread them on to skewers with veggies..oh the possibilities! All this can be done without the guilt of  having them deep fried in oil. Just bake em!

I experimented with a new ingredient. I found these dried red onions at a local  store in it's American Week sale. Here's what I did.
  • Pre heat the oven at 200 degrees.
  • Cut boneless chicken into bite size pieces.
  • Season it with black pepper and salt.
In a bowl add 2 tablespoons of grated cheese of your choice. I used just a little cheddar cheese as I didn't want to increase the calories here. Add a teaspoon of dry oregano, half a teaspoon paprika powder and 3 tablespoons of breadcrumbs.

  •  Beat an egg.
  • Put some dry red onions in another bowl.
  • in the following order coat the chicken pieces. Breadcrumb-Cheese mixture > Egg > Dry onion Mixture.

Spray a baking sheet with some olive oil .Bake at 250 degrees C for 8 minutes on each side. Bon appetit!
